Healthy 3 Ingredient Banana Oatmeal Pancakes w/ Greek Yogurt

Remember how I posted a recipe on healthy banana 2 ingredient pancakes? Well, everybody seems to like it, so here's another one with a little twist. I'd recently found this variation with oats, tried it & absolutely loved the result! Today I wanna share with you this recipe, along with my favorite topping of the moment, which will make your pancakes taste like a piece of cake.
 
Ingredients:

- 1 ripe banana
- 2 eggs
- 1/4 cup of oats

Directions:

1. Place the oats in the blender & pulse until they're ground into a powder-like consistency. You can also use pre-made oat flour.

2. Crack 2 eggs in a bowl, add well mashed banana & oat flour. Mix all the ingredients together.

3. Take a pan, coated with some kind of oil or non-stick spray. Put it on low-medium heat. Add a silver dollar-sized amount of your mixture to the pan. Let the pancake set for 30-40sec and flip it. Do the same with the other side.

4. Top off your pancakes with greek yogurt (I used strawberry flavor). You should totally try it, the whole thing will taste just like cake! Then, I also sprinkled some chopped almonds on top. You can totally use whatever toppings you want: fruits, nuts, honey, peanut butter, the sky is the limit!
